☕ The future of coffee, pink bourbon, a Kenya apart from the rest
Natural Pink Bourbon by Hidden Grounds
Natural | Medium Roast | Colombia | Pink Bourbon | Hidden Grounds
I like this coffee because it’s rare. Pink bourbons are a prized variety that’s usually washed, but this coffee’s natural fermentation makes it intensely sweet and pungent, almost like an anaerobic coffee.
Hidden Grounds was founded by a J&J employee who realized he was caught in a cycle of working, paying off debt, and watching Netflix. Hidden Grounds is an outlet for him to be fully present in his life and work.
Brew Recipe:
For a Hario V60, grind like kosher salt, and use a 1:18 ratio
The Future: Rum & Cola (Blend) by Black & White
Anaerobic Natural, Honey Cinnamon | Costa Rica, Colombia, Kenya |
Light/Med | Gesha, Castillo, Cattura | Black & White
A five bean blend is a lot, but Black & White does a good job of combining multiple single origin coffees into a nod to the classic Rum & Coke cocktail. Reylyn from NY says it reminds her of Haribo Happy Cola gummy bears.
Brew Recipe:
Japanese Iced Pourover on V60: grind like coarse kosher salt, and use a 1:15 ratio
After prewetting your filter, weigh 70g of ice into your carafe
Use an 18g dose, and do your regular pour over routine with 200g of water
Careful not to overextract, you can add more water or ice later
Washed Kenya by Joe Coffee
Washed | Light | Kenya | Ruiru 11, Batian | Joe Coffee
This coffee takes everything I know about Kenyan coffee and throws it out the window. It’s not really fruity or super acidic, it doesn’t taste like tomatoes, and it’s not even an SL28, SL34, or Kenya AA.
Notes of grapefruit rind and vanilla. It’s the best Kenya I’ve had.
Brew Recipe:
Be very careful not to overextract. Grind coarser. Swirl, stir, and agitate less.
Parting Idea
“Are we just living life...in a box? We wake up and eat breakfast from a box. We hop into our cars – another box. We take the box elevator to spend our days in a box cubicle. We type on a box and talk in a box. Then we drive the same box home and watch another box until we go to bed and do it all again the next day. What would life look like outside of the box?” – Tony Robbins
